Students at Kyrkskolan in Söderbärke, Sweden, tasted a mince made from ciona, a type of sea squirt, as part of the school's sustainability work. Several students were skeptical about the tasting. The sea squirt can be found naturally along the west coasts of Sweden and Norway and is also farmed in places like Stenungssund.
Anders Kiessling, a professor of aquaculture at SLU in Uppsala, said this is part of the future of food and that we must start farming in water. The sea squirt has a low climate footprint as it requires no feed or farmland and cleans the sea. It contains healthy proteins and fats.
