Some of NATO's highest representatives will arrive in Helsingborg on May 21–22 for Sweden's first summit as a host nation. Foreign ministers and other high-ranking NATO chiefs—about 40 in number—will enjoy a three-course meal in the castle restaurant itself. The main dinner will be held at Sofiero Castle.
The dinner menu features Scanian flavors, with an appetizer of asparagus, lobster, and lumpfish roe. The main course is Scanian lamb with nettles, morels, and artichoke, and dessert is a sorbet made from rhubarb, chocolate, and herbs. The delegates—about 100 in number—will be seated on the castle veranda, with a separate menu including cod with ramsons, cauliflower, and leafy greens as an appetizer.
Expectations are high for us, and of course one is tense before such dinners.
Their main course is Scanian duck from Munka-Ljungby, accompanied by green asparagus and new potatoes, and dessert is rhubarb with vanilla mousse and raspberries. For all other staff—it is unclear how many there will be—it has not yet been decided where they will eat dinner. The staff will have a 'seasonally adapted buffet' with 'Scanian spring chicken and new potatoes'.
Preparations have been ongoing since last autumn, according to Göteborgs-Posten, which reported that Marcus Nemrin described high expectations and tension before such dinners. According to Göteborgs-Posten, Per Dahlberg described the restaurant as extremely picky for this event, noting that Sofiero Slottsrestaurang does not differentiate between guests, but this dinner is not like any other. The total cost of hosting the summit and dinner remains unknown, as do specific security measures and which NATO countries' representatives are attending.
