Swedish supermarkets are experiencing empty shelves in their kvarg (quark cheese) sections as consumer demand for the protein-rich dairy product has surged beyond production capacity. According to Sara Paulsson, communications chief at Skånemejerier, the products are "flying off the shelves" faster than they can be restocked.
Paulsson told GP that over 40 percent of Swedes now consume kvarg, leading to what she described as a "boom" in recent times. The dairy company is reportedly producing around the clock to meet demand, with products being continuously restocked in stores. However, she acknowledged that shelves are being emptied faster than they can be refilled.

To address the production shortfall, Skånemejerier plans to expand its production capacity in September, according to Paulsson. The shortage highlights the growing popularity of the low-fat, high-protein dairy product among Swedish consumers, creating supply chain challenges for producers struggling to keep up with the increased demand.
