Linköping-based café chain Simons Rosteri och Bageri is expanding with a new location in the growing Colonia district, according to a report from Östgöta Correspondenten. Owner Simon Seropian is opening the new establishment despite already having a full schedule of responsibilities.
The new café, which opened on April 5, 2026, is strategically located between the Valla allotment area and Linköping University campus. Seropian aims to create a meeting place primarily for students but hopes to attract residents and workers from surrounding neighborhoods including Mjärdevi, Valla, Folkets Park, and Ryd.
The establishment will combine bakery services, lunch offerings, and a music scene, creating a multifunctional space for the community. The location previously housed the hamburger chain Bores, which went bankrupt approximately two years ago.
Seropian's expansion represents continued business growth in Linköping's university district, targeting the student population while aiming to serve a broader community base.
